We will lay the foundation in creating consistent and quality recipes, cover proper recipe development, and build your understanding in making the most of your commercial equipment. This session will cover how to create everyday consistency and accountability within an entire program, leading to staff efficiency, improved quality, and increased participation. About Christie WhiteChristie White is the Founder/Owner of What’s 4 Lunch, an in-depth, hands-on specialized kitchen training created solely for K12 School Nutrition. Christie’s vision for What’s 4 Lunch is to bring the “Franchise Approach” to the largest segment of our nation’s food service industry and to, ultimately, better serve our students every day. Christie’s motto, “Master What You Have!” allows school nutrition programs to understand where they are currently and the steps to take them where they want to go. Christie began her journey in school nutrition nearly 9 years ago, working on the equipment side. She is a self-titled “Equipment Nerd.” She quickly learned there is large gap for kitchen staff everywhere, specifically in preparing and serving specialized food in a commercial kitchen. This gap affects the daily efficiency of the staff, the quality of the food, and leads to a lack of understanding in proper equipment and kitchen use. Christie spent countless hours in school kitchens, thoughtfully learning proper equipment processes and collaborating with various K12 food manufacturers to better understand what food is being served to our students. Christie learned every aspect of kitchen flow, daily pain points, and staff education needed to better serve school nutrition programs across the nation. This is how What’s 4 Lunch was born! What’s 4 Lunch launched in 2021. Since the company’s inception, Christie has trained in 16 states and hundreds of kitchens, working with nearly every piece of manufacturer’s equipment and every food item. She has spoken at numerous state school nutrition association conferences, as well as at Annual National Conference (ANC) multiple times. Christie is an outspoken and passionate advocate for school nutrition at the state level, serving on the Indiana Legislative Committee and representing four states at SNA’s Legislative Action Conference, which she has attended several times. Christie works hard to teach school kitchen staff everywhere how to improve quality and efficiency, how to increase participation, and how to change the stigma of school lunch.
